I've been on such a peanut butter kick lately and this granola was the perfect addition to my cravings. I quickly came up with this recipe and it turned out sooo good! I love eating it on its own for a snack, but it's great on yogurt bowls or even dairy-free vanilla ice cream.
INGREDIENTS:
2 cups oats
Cinnamon to taste
1 tsp chia seeds
1 tsp ground flaxseed
1/2 cup creamy, runny peanut butter
2 tbsp maple syrup
1/2 cup dark chocolate chips (divided)
DIRECTIONS:
Preheat oven to 325 degrees F and line a baking sheet with parchment paper.
Combine all dry ingredients in a bowl, except the chocolate chips.
Add in the wet ingredients and mix.
Fold in 1/4 cup of the chocolate chips.
Spread the oat mixture into a thin layer on the baking sheet.
Bake for 10 minutes and toss granola around on the baking sheet.
Sprinkle the other 1/4 cup of chocolate chips on top.
Bake for 5 more minutes, then let cool.
