peanut butter chocolate granola

I've been on such a peanut butter kick lately and this granola was the perfect addition to my cravings. I quickly came up with this recipe and it turned out sooo good! I love eating it on its own for a snack, but it's great on yogurt bowls or even dairy-free vanilla ice cream.

INGREDIENTS:

  • 2 cups oats

  • Cinnamon to taste

  • 1 tsp chia seeds

  • 1 tsp ground flaxseed

  • 1/2 cup creamy, runny peanut butter

  • 2 tbsp maple syrup

  • 1/2 cup dark chocolate chips (divided)

DIRECTIONS:

  1. Preheat oven to 325 degrees F and line a baking sheet with parchment paper.

  2. Combine all dry ingredients in a bowl, except the chocolate chips.

  3. Add in the wet ingredients and mix.

  4. Fold in 1/4 cup of the chocolate chips.

  5. Spread the oat mixture into a thin layer on the baking sheet.

  6. Bake for 10 minutes and toss granola around on the baking sheet.

  7. Sprinkle the other 1/4 cup of chocolate chips on top.

  8. Bake for 5 more minutes, then let cool.
