pb cup oatmeal cookies

vegan, flourless, gluten-free

 

THIS ONE IS FOR ALL MY PB LOVERS!! I'm not kidding when I say these might be some of the best cookies I've ever made. They are soooo soft, and the texture is just perfect. You HAVE to try these!


INGREDIENTS:

  • 1/3 cup applesauce

  • 1/2 cup peanut butter (natural & runny)

  • 1 flax egg (1 tbsp ground flax and 3 tbsp water)

  • 1 tsp vanilla

  • 2 tbsp coconut sugar

  • 3/4 cup gluten-free oats

  • 1/2 tsp baking powder

  • 3 Unreal Crispy Peanut Butter Cups, chopped


DIRECTIONS:

  1. Preheat oven to 350 degrees F and line a baking sheet with parchment paper.

  2. Mix all wet ingredients together in a medium bowl.

  3. Add the dry ingredients (except the pb cups) and mix.

  4. Fold in the chopped pb cups.

  5. Scoop spoonfuls of dough onto the baking sheet.

  6. Bake for about 10-12 minutes.
