no-bake bday tahini cookies

vegan, gluten-free

 

Pressing pause on the pumpkin recipes to share these NO BAKE BDAY TAHINI COOKIES because it’s my 18th birthdayyy <3 I was inspired by my no-bake choco chip tahini cookies that I made over the summer!! I was OBSESSED with those if anyone remembers…but now it’s time for these cuties to shine!

INGREDIENTS:

  • 1 scoop vanilla plant protein

  • 2 tbsps oats

  • 2 tbsps oat flour

  • 3 tbsps maple syrup

  • 1/3 cup runny tahini

  • Sprinkles

  • Maldon salt

DIRECTIONS:

  1. In a small bowl, combine the protein powder, oats, and oat flour.

  2. Add the maple syrup and tahini, and mix until a dough forms.

  3. Fold in chocolate chips.

  4. Form dough into little cookies and place on a parchment-lined plate, pan, container, etc.

  5. Top with some flaky salt and freeze for at least 15 minutes.
